This time of year there are always parties to attend. A side dish I love to bring is Caramel popcorn. It also makes a great gift to give to coworkers, neighbors or friends.
Ingredients:
1 cup butter
2 cups brown sugar
½ cup corn syrup
1 tsp salt
½ tsp baking soda
1 tsp vanilla
5 quarts popped popcorn - for best results used kerneled popcorn.
Steps:
Preheat oven to 250 degrees.
Place popcorn in a large pan that you can stir the popcorn when you coat your with caramel .
In a medium saucepan over medium heat, melt butter.
Stir in brown sugar, corn syrup, and salt.
Bring to a boil, stirring constantly.
Boil without stirring for exactly 4 minutes.
Remove from heat and stir in baking soda and vanilla. Be careful it may spit once it hits the bottom of the pan.
Pour in a thin stream over the popcorn and stir to coat. It cools very fast, so this step has to be done quickly.
Place popcorn in the oven and stir every 10-15 minutes (depending on stove and baking dish) for a total of 1 hour.
Remove from oven and let cool completely before breaking into pieces.
